Salary: 115,000 - 125,000

Other Forms of Compensation: 20% Bonus

Pay Grade: 17

The Regional Executive Chef will oversee and handle food service for some of the nation's largest sports and entertainment venues and events. They will serve as a leader and mentor to teams of chefs and kitchen staff. It will be their primary responsibility to create "The Levy Difference" with cuisine that exceeds the guests' expectations and to provide strong leadership while delivering cost goals and living our vision and values. They will be responsible for delivering culinary standards that live up to our renowned reputation by establishing standards for menu content, ensuring execution of menu content, and establishing and maintaining show quality and presentation standards.

What the Role is

* Lead the development of culinary teams for new location openings and major event activations

* Orientates new Chefs within their respective Core Culinary Standards, and established food programs.

* Project manage the hiring and training of culinary talent for new business openings

* Oversee menu design and execution for properties responsible for in Region

* Completes all required reports, logs, and Core Culinary Reviews in a timely manner.

* Supervise large teams of chefs and kitchen staff

* Plan and strategize to ensure efficient execution of cooking and delivering the highest quality product to guest

* Prepare and cook products according to recipe specifications and food safety/sanitation guidelines

* Partner with Purchasing department and location chefs to achieve maximum sales growth through product selection, execution and pricing

* Partner with location chefs to develop strategies to achieve food and labor prime costs

* Implement, maintain and audit all locations to ensure the Levy Core Signature standards for all food-related and purchasing programs are in compliance at all times

* Executes innovative recipe development and refinement

* Understand, train and maintain compliance of all Levy financial control systems

* Supports Region with any major event or function

* Ensures that all sanitation and safety standards are being met throughout Region

* Promote a cooperative, team building work environment to maximizes productivity/morale within Region

* Ensure that all chefs within Region have the proper culinary tools to deliver "The Levy Difference"

Who you are

Experience

* 7+ years of experience in the food service industry

* Willingness to travel 75% of the event calendar

* Demonstrated leadership and management experience, working with and leading teams

* High volume, complex food service operations experience

Skills/Qualifications

* Degree or training in Culinary Arts, Hospitality or related field, or culinary certificate preferred.

* Passion for cooking and the food industry, with a drive to learn and improve constantly

* Ability to physically keep up with the stress and demand of the job

* Creative thinker and problem-solver who brings passion, enthusiasm and fresh ideas to the table (literally)

Working as the Regional Chef you will work with leadership team in planning, implementing and supporting new food concepts or programs within a respective territory. You will be responsible for the research, testing, development, documenting, training, implementing, monitoring, evaluating and making necessary adjustments to innovative new dishes, concepts and/or food programs. This position will play a key role in new facility design and roll out, menu creation, cost reduction, establishing and maintaining culinary standards and more.

Key Responsibilities:

  • Orientates new Chefs within their respective Core Culinary Standards, and established food programs.
  • Maintains all Culinary Programs and Standards in their home account to the level of Culinary Center for Excellence.
  • Provides support for new account openings and or renovations within the territory.
  • Provides Culinary Leadership to Chefs within the respective Territory.
  • Assists with training, coaching, and development of Culinary personnel within assigned territory.
  • Completes all required reports, logs, and Core Culinary Reviews in a timely manner.
  • Communicates effectively with Corporate Executive Chef, Regional Director of Operations, and unit level Chefs via email, conference calls, etc.
  • Reads and complies with all policies and procedures of the Company as appropriate.
  • Projects and practices consistent ownership attributes, which provide a high level of quality and service at all points of contact.
  • Is comfortable and familiar preparing food in a regulatory environment.

Preferred Qualifications:

  • Culinary Arts Degree from a recognized Culinary school (i.e. CIA, Johnson and Wales) or equivalent experience
  • Five years of progressive food service production management experience
  • Previous multi-unit experience preferred
  • Serv-Safe Certification
  • Must be computer literate able to utilize Microsoft Office Suite and Webtrition Software packages
  • This position will require 75% travel
  • Certified Executive Chef an added plus!
